This one was a hit! Light and refreshing, perfect for summer! I used a whole bottle of champagne and the flavor came through nicely. I also added about a half a teaspoon of raspberry emulsion to the buttercream since I don’t love the flavor of champagne I felt like it needed a little something else.

Ok – I made half the recipe of the champagne cake and used 2 6” pans. I followed everything exactly and they came out wonderful. I didn’t have Martinelli’s but had a bottle of Rose wine so I reduced that and used it in the cake. It gave a nice flavor. I frosted them with the raspberry filling recipe and the cake was delicious. Thanks again! Next week I’m making the chocolate peanut butter cake.

I think for sure I overbaked. The texture was fabulous. I went back and reviewed your tutorial on How to bake moist cake layers. I’m going to try it again but only the cake and half a recipe. Thank you for the feedback. I appreciate it. I’ll let you know.

Sounds like it looked beautiful! Sorry to hear about the texture. Next time, make sure you beat the butter, sugar and eggs really well – the texture should be smooth, silky, and fluffy when you’re done with that part. And then maybe reduce the bake time by a few minutes. If it’s dry, it probably got a little overbaked.

I made this recipe as cupcakes for the Lunar New Year. So fun to male the different elements over a few days with my almost-4-year old. Cutting out the tops was a bit tedious, but SO worth it! All elements came together for a really lovely cupcake.
Next I want to stay the strawberry truffle cake for Valentines Day!
