I made this cake last night and it is so delicious! Do you find that this cake doesn’t rise as much as other cakes? Maybe because of the heaviness of cookies? I love the cake…just want to know your opinion. Ingredients were room temp & weighed, didn’t overmix the batter, brand new baking powder, oven temp was spot on. Lol!

I made this cake for my son’s birthday since his favorite ice cream is mint cookie (kind of a mashup of cookies ‘n cream and mint chip). I wanted it to be a bit more chocolaty so I added ganache between the layers and a drip on top. We all loved it! My mom asked me to make it for her birthday too (9 days after my son’s birthday). This time I’m going to try using your grasshopper cake layers without the crust and with this frosting instead of the mint since we all love chocolate. Thanks for your great recipes!
