They’re both great. I used my mom’s lemon bar recipe to inspire this cake so I made it more like her bars.

Less flour and sugar in the newer recipe (Lemon Bar Cake) Why? Does one recipe work better than the other?

If you don’t have the lemon pudding, I would use a teaspoon or two of lemon extract in place of it.

Would love to know if there is some replacement for the lemon pudding and the amount to use because in my country we don’t use it so I can’t find it. Thank you so much!!!

My cake came out very dense too. Definitely not serving this. The shortbread was flavorless and added nothing to the recipe. I followed the recipe exactly, always weighing ingredients for accuracy.

Second – I think I’ve read enough across your site to feel comfortable turning these into cupcakes. But curious if you have any tips or suggestions?!

It will probably be easier to freeze the layers and assemble there if you have the room to do it!

In reply to cakebycourtney.

I’m planning to make this cake for my sis-in-law’s birthday next weekend. We’ll be driving several hours to get there. Is it best to bake the cake in advance (freeze the layers) and assemble/frost it right before going to the party? Or should I complete the cake and freeze it before traveling? Thanks!

I kind of want to keep the zest in the curd. I’m imaging that the texture would be enjoyable. Any feed back would be appreciated. (◕ᴗ◕✿)

This cake was SO GOOD. Even better the next day. I was so surprised because I wasn’t sure how the texture would be, but it WORKS. Mmmmm

Yes you can. The buttercream can stay in the fridge for a week or so.

The BEST lemon curd ever! Thank you so much!! But my cakes came out really dense, not light and fluffy. Baking Powder is fresh & I made sure I didn’t overmix the batter …. could it be because I made my own buttermilk with milk and lemon juice?

Will the extra lemon juice make it too wet and require additional flour?

The lemon blueberry cake uses fresh lemon juice, where the lemon bar cake has the pudding…is there a reason for the difference?

If you’re a lemon lover, this cake is to die for! I’ve made it twice (cut the recipe in half and made a 2 layer 6″ cake and a 3 layer 4″ cake) and kept it all to myself LOL
The only thing I changed was I covered it with lemon cream cheese buttercream and that was only because I prefer cream cheese buttercream over regular buttercream.
