I made this cake about three years ago with no issues. I’m making it again for my daughter’s birthday, and the ganache for the buttercream has gone wrong twice, to the point where I had to abandon ship and make a regular chocolate buttercream with cocoa powder. Any ideas what I’m doing wrong? Both batches of ganache came out gloopy and not smooth. Both split. The buttercream I ended up with is fine, but doesn’t taste very chocolatey. 🙁

This cake is good, and, thank you for taking the time to write out and post your recipe. (I used coffee instead of water, too, since this always seems to up the deliciousness of any kind of chocolate cake.) That said, I agree with some of the other posters that the fillings and decorative parts need to 1/2 or 3/4 what is recommended because it makes way too much, which is a bit wasteful. What do I do with all this extra icing, filling, ganache, fluff, enough to decorate a whole extra (delicious!) cake? I ended up baking a second round of crusts/cakes to use up the rest of it. Also, is it a good idea to put parchment paper in a broiler? Paper burns around 450 F and your average oven broiler setting runs at 500-550 F. I recommend you intrepid bakers out there use foil on the marshmallow cookie sheet or just an unlined cookie sheet in your broiler instead, just for safety’s sake, even if those marshmallows aren’t really in there for very long.

That’s ok! Make the crust in a sheet pan and then crumble it and sprinkle it between the layers as you assemble.

This cake is just perfection! It has everything from amazing flavors to wow factor when you see it! Made it for my daughter’s 24th birthday and she loved it. I used coffee instead of water and followed the rest of the recipe as written. Worth the effort and very satisfying to make and see come together! One of the best cakes I have ever had/made! The marshmallow layer was a stringy, oopy mess that oozed out the middle, and out the frosted sides of the cake (which ended up sliding massively). Also, it made SO MUCH, which felt like an incredible waste. Even though it acted like melted marshmallow (even over an hour later), it tasted more like buttercream – so I would have been better off to just spread the jarred fluff. The chocolate buttercream was more than needed too. I didn’t even bother with the fluff top since there was so much extra of everything else. Sadly, my son’s birthday cake turned out like a pile.

Her chocolate cake to start is perfect! It is the best, I use to had Ina Garten’s one as favorite but this one for some reason is better, I do use Ina’s tip, instead of hot water I use hot espresso!
