Giving this a 4 only because it is SO MANY STEPS. I knew what I was getting into when I looked at it but it is not for the faint of heart. The cake itself is delicious. I made this as cupcakes and gluten free (celiac) for a baby shower. The cake is so good, very moist, the filling and buttercream are also delightful but I ended up splitting up making this into like 3 days. Made the cupcakes one day 1 and the filling and buttercream on day 2 and assembled on day 3 just so I wasn’t having to wash my mixer 3 times in one day. I also totally screwed up and used a full 3oz package of vanilla pudding in the filling but it worked out fine and tasted delicious the filling was just a bit thick.

Update after making – flavors are on point. Love the nilla wafer crust! The PB mousse filling is delicious but soft. It held up well in terms of stacking (no sliding) but it definitely started to slide when I was cutting it. It’ll have to be refrigerated if not all cut/eaten in one time frame. Banana cake moist and delicious.

Just confirming that there is no actual banana in the pudding filling, since it is called a “peanut butter banana cream” filling? Is it just the extra banana slices that get added on top?
